Notes from the Winemaker:
On the 2015 Late Harvest Sauvignon Blanc - For our 2015 Late Harvest Sauvignon Blanc we hand-harvested a local Calistoga vineyard just north of our winery on October 16th at 32.0 brix. At this high of sugar content, the clusters coming in were half grape and half raisins. Once the grapes arrived at the winery they were gently whole cluster-pressed directly to tank where we initiated a slow, cold fermentation that captured the fruity and floral characteristics in the wine. Once the fermentation began, the juice was racked to barrels (10% of which was new French oak) and the fermentation was allowed to continue. After achieving our target sugar content, we dropped the temperature further to arrest fermentation and lock in the sweetness. No malolactic fermentation was allowed. After a few more months of barrel aging, the wine was bottled. Bottled 260 cases. Enjoy now and over the next 2-4 years.
